I love unique, flavorful condiments for sandwiches.   My Cool and Creamy Pesto Spread is delicious on grilled chicken sandwiches, as a condiment for grilled fish, or prepared as a salad dressing.  Thin the dressing down and you have a scrumptious dip for chilled crudités.

Cool and Creamy Pesto Spread

This is another one of those 'recipes' that is really not a recipe.  Simply combine a good quality low fat plain yogurt with our delicious classic Basil Pesto until you reach the consistency and flavor you desire.  I usually start out with 1 tablespoon of each, then add more pesto for an intensely herbal flavor with a chunky texture.  If I want a smoother, milder flavor, I add a little more yogurt.

Cool and Creamy Pesto Dip

Turn plain low fat yogurt and pesto into a dip for icy cold vegetables by combining the pesto and yogurt to the desired taste then pulse in a blender or food processor for a few whorls.  To thin, add a little milk until you reach the desired consistency. 

Serve the dip cold with carrot & celery sticks, cucumber rounds, snow peas, or any of your favorite dipping veggies!

Cool and Creamy Pesto Dressing

Combine equal parts of plain low fat yogurt with classic Basil Pesto.  Stir to combine.  Set aside while you prepare the greens and other vegetables.

Add a variety of chilled salad greens to a large bowl.  Add other vegetables, such as sliced green onion, chopped bell pepper, cucumber, tomatoes, carrots and anything else you enjoy in your salad.  Drizzle with a bit of olive oil and wine vinegar, a sprinkle of sea salt, and some fresh ground pepper.  Toss lightly to evenly coat the greens. 

Add enough of the yogurt-pesto mixture to coat the greens with the desired amount of dressing.  Taste and adjust as necessary.  Serve in chilled salad bowls.  Top with a sprinkle of shaved parmesan cheese and enjoy!
